Get your tastebuds kicking with this grilled lamb leg recipe infused with the flavours of Kaffir lime and chilli.
For the Sauce
Cooking the Lamb
Make small holes in the lamb leg and slot in the garlic slices
Grill for 20 mins
Take off the heat then rub the lamb leg with red chilli paste
Grill for another 40 mins then rest the meat for 20 mins
Cooking the Sauce
Stir fry the shallot, galangal, garlic and kaffir lime leaves
Pour the water in
Add basil & holy basil
Season with fish sauce, lemon, dried chilli and bird eye chilli
Continue heating the sauce for 10 mins until sauce reduced and thickens
