Ingredients

For the lamb

  • Lamb Shank
  • Dried Chili
  • Galangal
  • Kaffir lime leaf
  • Thyme
  • Rosemary
  • Salt
  • Black pepper
  • Olive oil

Romesco Sauce

  • Capsicum
  • Garlic
  • Tomato
  • Lemon Juice
  • Olive Oil
  • Red Chili
  • Salt and pepper

Japanese Oba Corn Salsa

  • Sweet Corn
  • Tomato
  • Onion
  • Garlic
  • Thai chili bird's eye
  • Lemon Juice
  • Oba Leaf
  • Olive Oil

Method

Cooking the Lamb

  1. Chop all the herb ingredients

  2. Dry rub lamb shank with herbs

  3. Slow cook for 1 hour

 

Romesco Sauce

  1. Saute all ingredients together except lemon juice

  2. Blend the ingredient together with the olive oil

  3. After blending, then sieve it

 

Japanese Oba Corn Salsa

  1. Dice all the ingredient

  2. Mixed everything together

  3. Add freshly squeezed lemon juice, a drizzle olive oil
