Aussie Beef Krapow Pie

Ingredients

Filling 

180g Australian Striploin

2g Vegetable Oil

3 Medium Sized Boiled Egg

 

Filling Sauce 

15g Krapow (Holy Basil)

20g Oyster Sauce

10g Fish Sauce 

2g Red Chili (Crushed)

12g Garlic (Crushed)

400g Water

A pinch White sugar

A dash Black soy sauce

 

Pie Crust 

500g Frozen Puff Pastry

1 Egg (for egg-wash)

Method

For Sauce 

  1. Sweat off garlic and chili in a saucepan over medium heat
  2. Combine all other ingredients, except for water and corn flour, in a mixing bowl and gently mix together.
  3. Add the combined mixture into saucepan
  4. Add half the water(200g) to saucepan
  5. Reduce contents to ⅔
  6. In a small bowl, mix corn flour with other half of water
  7. Add cornflour mixture into the saucepan
  8. Reduce further for another 5 minutes, or until it gets to a sauce-like consistency

Assemble

  1. Cut up Australian Striploin into small dices
  2. Warm up a pan with vegetable oil, and sear every side of diced beef
  3. Add Krapow sauce to the pan. Put aside to let it cool slightly
  4. Using a bowl slightly larger than your pie tin as a cutting guide, cut a round of pastry
  5. Use the pie tin to cut another piece of pastry 
  6. Place rolled-out pastry in pie tin and gently press dough into the sides of the tin
  7. Spoon in the filling and insert peeled boiled egg
  8. Place pastry for the top over filling
  9. Brush pie with egg wash
  10. Bake in a preheated oven at 190c for 30 minutes
  11. Drop temperature down to 180c and continue baking for 10 minutes
  12. Remove pies from oven, and cool on a wire rack for 10 minutes
  13. Enjoy!
