Pat from @cookingbypat Mala Beef Skewers

The signature Sichuan seasoning that is loved by many Thais! Pat from @cookingbypat shares her take on the familiar Mala spices and sirloin cubes on the flaming grill.

Ingredients

  • 400g Australian Sirloin
  • Wooden Sticks

For Mala Sauce

  • 2 tbsp Oyster Sauce
  • 1 tbsp Fish Sauce
  • 1⁄2 tbsp Sugar
  • 1 tbsp Sesame Oil
  • 2 tsp Sichuan Chili peppercorns, grounded
  • 1 tsp Thai Chili Flakes

Method

  1. Soak the wooden skewers in water until ready to use.

  2. Cut the sirloin steak into 1.5cm sized cubes. Assemble cubed beef onto skewers, three pieces per stick.

For Mala Sauce

  1. Combine all sauce ingredients and set aside.

For Grilling

  1. Place skewers on the grill, and lightly brush with mala sauce–turning the sticks once the meat releases from the heat–should take about 45 seconds to 1 minute per rotation.

  2. Coat skewers with mala sauce after every rotation, remove from heat when medium rare–there should be a slight char on the meat from the high heat. Serve, and enjoy.
