Tui from @tui.u.ri.cooking, shares a Thai summertime dish, perfect as a refreshing appetizer to be shared with family and friends. The fresh Thai herbs and spicy peanut sauce, with tender strips of sirloin and vermicelli noodles pack a flavourful and buttery bite!

Ingredients

  • 400g Australian Sirloin
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Seasoning Sauce

For Dipping Sauce

  • 10 Red Chilis
  • 8 Pieces of Garlic
  • 2 Coriander Roots
  • 2 Fresh Limes, Juiced
  • 1 tbsp Sugar
  • 3 tbsp Water
  • 5 tbsp Roasted Peanuts

Fresh Vegetables and Sides

  • 200g Pickled Green Cabbage
  • 4 Fresh Chilis, sliced
  • 2 Heads of Green Lettuce
  • 100g Coriander
  • 100g Thai Basil
  • 100g Fresh Rice Vermicelli Noodles

Method

For the Sirloin

  1. Season the sirloin with salt, pepper, and seasoning sauce, before slicing into thin pieces. Pan fry on high heat, until medium rare.

For Dipping Sauce

  1. Combine all ingredients into a mortar and pestle, or food processor. Blend until desired consistency for sauce is achieved.

To Serve

  1. Slice the seared sirloin into thin slices.

  2. Prepare a large platter with the sirloin in the center, and all the fresh vegetables washed and cut.

  3. Twist noodles into bite-sized balls, and serve alongside a platter, with dipping sauce
